• 16 ounces Palmetto Gardens Kale Greens
  • 14 ounces chicken broth
  • 2 cups water
  • 8 ounces penne pasta
  • 2 tablespoons olive oil
  • 16 ounces turkey sausage
  • 1 tablespoon garlic, minced
  • 1/2 cup yellow onion, diced
  • 1 1/4 cup Versatile Veggies Sliced Pepper Medley
  • 1 tablespoon Italian seasoning
  • 1/2 cup grated Parmesan cheese (optional)

In a medium pot over medium-high, heat chicken broth, water and kale for 20 minutes or until kale is tender. Drain kale and set aside. Meanwhile, prepare pasta according to package directions. When pasta is done, drain and set aside. In a large skillet over high, heat olive oil. Reduce heat to medium; add turkey sausage and cook, crumbling until almost done. Add garlic, onion and pepper medley; cook for 3-5 minutes or until vegetables are tender. Stir in seasoning, cooked kale and cooked pasta. If desired, sprinkle with salt and pepper to taste. Just before serving, sprinkle with Parmesan cheese.
