• 2 garlic cloves, chopped
  • 1/2 cup red bell pepper, diced
  • 4 ounces Versatile Veggies® Diced  Yellow Onion
  • 4 ounces firm, spicy sausage
  • 2 tablespoons extra-virgin olive oil
  • 2 cups vegetable stock
  • 1/2 teaspoon sugar
  • Salt and pepper to taste
  • 16 ounces Palmetto GardensTM Mustard Greens
  • 1 cup half-and-half

In a large saucepan, sauté garlic, red bell pepper, onions, and sausage in olive oil. In a medium pot, add vegetable stock, sugar, salt and pepper and bring to a boil. Add greens and bring to a boil again. Lower heat to medium, cover pot and cook for 35 minutes. Add sautéed mixture and half-and-half. Stir and simmer 10 minutes.
